High Protein Spiced Apple and Coconut Cake - A delicious, gluten & grain free, protein-packed treat using Body Protein+
Ingredients
- 2 large apples, grated
- 1 cup coconut flour (or almond flour if preferred)
- 1/4 cup Body Protein+ (Vanilla)
- 1/4 cup melted coconut oil
- 1/4 cup maple syrup or honey
- 3 eggs
- 1 tsp ground cinnamon
- 1/2 tsp baking powder
- Coconut (for topping)
- Greek yoghurt (for topping)
Method
- Preheat the oven to 175°C. Grease or line an 8-inch round cake pan.
- In a large bowl, combine all ingredients: flour, Body Protein+, cinnamon, baking powder, grated apples, melted coconut oil, maple syrup (or honey), and eggs. Mix until well combined.
- Pour the batter into the prepared pan and bake for 30-35 minutes, until a toothpick inserted in the center comes out clean.
- Let the cake cool before serving. Top with coconut and Greek yoghurt, enjoy!
