Carla’s favourite festive recipes

Every year, I love curating a Christmas menu that’s fresh, flavourful and (naturally) good for your gut. Alongside an abundance of fresh seafood (think: prawns and oysters), a fresh loaf of fermented sourdough bread and probiotic-rich miso whipped butter, these are some of The Beauty Chef recipes you'll find on my Christmas table this year.

Whether you’re hosting big, small, or not at all, I hope this festive spread inspires you to bring a touch of The Beauty Chef magic to your holiday season.

Salmon & Smoked Trout Rillettes

For an appetiser this Christmas, I'm serving this delicious Salmon & Smoked Trout Rillettes.

It’s loaded with essential fatty acids and skin moisturising fats, as well as our Deep Marine Collagen™ powder, to feed your skin and nourish your belly.

You can serve it on the day with crunchy crackers or crudités. And if you have any leftover, it can be mixed through cooked and cooled potatoes (a good source of resistant starch) with a little extra coconut cream and lemon juice to make a salad. Perfect if you’re continuing the festivities into Boxing Day.

Roasted Carrot, Radicchio & Toasted Walnut Salad with Orange & Umeboshi Dressing

For me, the sides and salads on my Christmas menu are the main event and where I like to get creative. This delicious roasted carrot and radicchio salad has a fresh and zesty dressing which is perfect paired with both seafood or meat on Christmas Day. Carrots are also a very good source of pro-vitamin A, which is vital for supporting healthy mucous membranes in the gut and skin.

Rainbow Chard, Tomato and Goat’s Cheese Tart

This tart from The Beauty Chef Cookbook is always a crowd pleaser. It has a gluten-free buckwheat and hazelnut base and is filled with so many supernutrients like riboflavin, zinc and biotin. I use Goat’s cheese rather than traditional cow’s milk feta as it’s easier on the digestive system.

It’s delicious served both hot or cold—so can be enjoyed no matter what hemisphere you’re in this Christmas.

Collagen Panna Cotta

We collaborated with the talented Athena Calderone a few years ago and she created this delicious dairy-free panna cotta using The Beauty Chef Collagen Boost™.

I’ve made it for a few dinner parties since and it’s always a hit. I love how simple it is to make and the fact that it's filled with all the skin and gut-loving benefits of our vegan collagen elixir.

Antioxidant Pomegranate Fizz Mocktail

If you’re planning on having a sober Christmas this year, or just want something to sip on between the champagne and wine, then I urge you to try this Antioxidant Pomegranate Fizz Mocktail.

Antioxidant Boost™ tastes delicious just with sparkling water, but I love adding a festive touch with the pomegranate and fresh herbs.
