For the chia berry jam
For the vanilla yoghurt
Process walnuts in a food processor on high until finely ground. Add cacao powder, Body Inner Beauty Powder, sea salt and vanilla and process to combine.
While food processor is running, add the dates in one at a time. This should form a crumb consistency. Add the almonds, cocao nibs and dried cranberries or cherries (if using) and pulse several times until well combined.
In a square dish, press the mix to get your desired thickness. Put in the refrigerator or freezer for 15 minutes to firm up.
For the chia berry jam blend all of the ingredients together well in a food processor. Pour mix into a bowl and leave to thicken in the fridge for an hour.
For the vanilla yoghurt; add the maple syrup, vanilla, and scrape the seeds of vanilla pod (optional) into the yoghurt and stir to combine.
For the parfait, layer chia berry jam, then yoghurt, followed by broken up pieces of brownie in one big serving dish or four glasses. Optional: Sprinkle with chopped roasted nuts and toasted dessicated coconut.
